Buttermilk Oven-Baked Pancakes

These are so easy that if you never make pancakes for your family, you truly have no excuse now. :) Yum! Yum! Yum!

Buttermilk Oven-Baked Pancakes

1-1/2 c. all purpose flour
2 T. sugar
1 t. baking soda
1 t. baking powder
1/4 t. salt
1 egg, beaten
1-1/2 c. buttermilk
3 T. oil
cinnamon-sugar to taste

Mix together flour, sugar, baking soda, baking powder, and salt. In a separate bowl combine egg, buttermilk, and oil; add to dry ingredients. Stir until just mixed, but lightly lumpy. Spread batter evenly in a greased and floured (use Baker's Joy!) 15x10 jelly-roll pan. Sprinkle with cinnamon-sugar to taste. Bake at 350 degrees for 16-18 minutes, until top springs back when lightly touched and edges are lightly golden. Cut into squares and serve with butter and maple syrup. 4-6 servings.
~Gooseberry Patch

**I doubled the recipe and baked it in Pampered Chef bar pans, one large and one small. Yes, lightly lumpy, but be sure to break up clumps of baking powder and soda.

With love,
Trisha

  1. This looks great! I wonder if my Pampered Chef large bar pan would hold the batter.

    1. Kim,
I was calling their bar pan a jelly roll pan, so I changed the name above. Make sure about the 15x10...you might just end up with a thinner pancake if the pan is too big.

  2. Thank you for sharing! So much easier than standing over a griddle while the kids eat the pancakes faster than I can prepare them!

    1. I understand! We're always having to warm ours up in the oven while we wait for enough pancakes to be ready to feed everyone. This was perfect for making on Sunday morning...less clean-up and time watching the pancakes. Of course, I'll never give up my old-fashioned kind, but this sure was yummy! Thanks for visiting!

    1. Ooh, let me know how that turns out. I have some friends who need to eat gluten-free, and it would be great to let them know. So nice to meet you Jean!

  4. Yum! Have you tried it with whole wheat flour?

    1. I haven't. I don't even keep whole wheat flour in the house (hangs head) because I often find it difficult to bake with. I'd love to know if it turns out well!

  6. Good recipe for winter, I think. It's much to hot to use the oven right now where we are. And no air conditioning. But it looks yummy!

  7. I have been meaning to search for an oven-baked pancake recipe for a while. Just last night as I was cleaning the kitchen I was thinking about how I needed one! And hear it is right in my reader. Thank you, Trisha! :)
