This Week's Hit: Sausage Bean Soup and North Meets South

I confess I'm just not a soup lover. I like chicken noodle, and that's where the lovin' stops.  What I love more is making soups for my family, and this week's new recipe was a hit.

Sausage Bean Soup

4 c. water
1 med. potato, peeled and chopped
1/2 lb hot sausage
2 cans (16 ounces) kidney beans, drained and rinsed
1 (28 ounces) can diced tomatoes, undrained
1 c. chopped onion
1 med. green pepper, chopped
1 bay leaf (didn't have this and still tasted great)
1/2 tsp. garlic salt
1/2 tsp. seasoned salt
1/2 tsp. pepper
1/2 tsp. dried thyme

In a large saucepan, bring water and potato to a boil. Cover and cook for 10-15 minutes or until tender (do not drain). Meanwhile, crumble sausage into a skillet and cook over medium heat until browned. Drain and then add to saucepan.

Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until heated through, stirring occasionally. Discard bay leaf.

10 servings

I'm still in search of the perfect cornbread. Though I'm a southern girl, I like my cornbread sweet, and my Mountain Man doesn't. This recipe from King Arthur Flour might be the perfect compromise.

Because I love my man so much, I cut the sugar in half to 1/8 c., and everyone was pleased.

If you have a favorite cornbread recipe, PLEASE share!!

Enjoy!

  1. Oh I LOVE soup....of almost any kind. I think I will try this, but not with "hot" sausage, I'd probably regret that, haha

    Have a good day!

  3. I love my cornbread sweet-I like everything (just about) if it is sweet. I have a recipe where you use a yellow cake mix in it. They are yummy but they are sweeter.
I will send it to you so you can try it but they are more yummy cause they are more cake like. That is why I love Famous Dave"s cornbread it is like cake to me.
I am a soup girl- I love potato and cream of broccoli!
    Hope you are doing well.
    Love you

  6. I'm totally thrilled that you linked this yummy work to Wednesday's WOW! My fave cornbread recipe is at Walmart in a little GV box. I fix it with *extra* sugar and a can of sweet whole corn. (But don't tell all the health nuts around here.) Love and hugs!

  7. Your soup looks delicious. I'll try
to print the recipe. I love sweet
corn bread, but your dad always
liked corn bread without any sugar.
I was good at using the Jiffy mix.
