Comfort Food: Baked Oatmeal

I know...baked oatmeal as comfort food?? Truthfully, I had never even eaten oatmeal (other than in cookies) until I discovered this recipe. It is delicious, and especially comforting when you wake up to this.....

as we did this past Saturday morning. Try it and see if it makes an oatmeal lover out of you. :)

Mix together:

1/2 c. butter, melted

1 c. brown sugar

2 eggs beaten

1/2 tsp vanilla

Then add:

3 c. rolled oats

2 tsp. baking powder

1/4 tsp cinnamon

1 tsp salt

1 c. milk

Bake at 350 degrees in a greased casserole dish for 30 minutes. When done, top with pats of butter and sprinkle your serving with cinnamon sugar. (This is Baked Oatmeal done the Poff Clan way). I usually make two pans of this when all of us are here for breakfast, and we'll snack on the leftovers the rest of the day.

  1. Queen Mom, it sounds good, but I'm not so sure about eating it. Maybe it was forced on me when I was just a little one, but I just can't brave it. I'm sure your dad would enjoy it. Just might have to try it. Enjoy all your posts, dear one.

  5. Hey there QueenMom! I love to make this, and our whole family LOVES it! It's like eating very soft oatmeal cookies, warm and right out of the oven! I do have some nutrition info for your friend... I add baking powder to mine (but that doesn't change the nutrition info). There are 260 calories, 9 g fat, 40 g carbs, and 6 g protein per serving, and ours usually serves 6 people.

  6. Ooh, you saved me Terri! I can't believe I left out the baking powder. I've got it corrected now, and hopefully, anyone who tries it will have the complete recipe! Thanks, too, for the nutrition info.
