In my recipe book, these are actually called "June's Potatoes." What's funny about that name is that, as the story goes, June never even made these. Call them what you will...this is an easy and tasty side dish. We enjoyed it with kielbasa and a salad.
30 ounce pkg. frozen shredded hashbrowns, divided
12 oz. pkg shredded sharp cheddar cheese
2 c. whipping cream
1 t. salt
1 t. pepper
1/2 c. soft bread crumbs
2 T. butter, melted
Pour 3/4 hashbrowns into a large bowl; use remaining hashbrowns for another recipe. In a lightly greased 2-1/2 qt. baking dish, layer half the hashbrowns and top with half the cheese; repeat layers. In a separate bowl, combine whipping cream, salt and pepper; pour over potatoes. Mix bread crumbs with butter and sprinkle on top. Bake at 350 degrees for 45 minutes. 8-10 servings. (I actually had to bake this an hour.)

We do something similar to this except instead of the whipping cream we use 1 can of cream of chicken soup and 1 cup sour cream. We call ours potatoes for a crowd, and it is perfect when I've got to serve a large work crew or go to a potluck (cooks beautifully in a crockpot - be sure and spray the crock, though). I am going to have to try it with the whipping cream now - I'll bet that is divine. John's mom will top it with crushed corn flakes, and we've also topped it with those french fried onion things. I'm so glad God created the potato because I love them so many different ways. Thanks for adding another one to my list now.

I want to make these cheesy potatoes right now!
They also would be great as a brunch dish.
Thanks!

The recipe looks delicious.I'd say it's definitely a keeper. I'll have to try it - or maybe Queen Mom will make it in March when I'm out there.
