Just the Right Size

The older girls and I had fun making these mini apple pies last night. They were just the right sized servings for most of the Littles, but Scribe and Little Big Man battled over who was going to get the leftovers.

Whistler loved filling the pie crusts, insisting that these little pies were just "the cutest things."
Boo did her part, too, carefully laying out the top crusts.

Whistler can't wait to get them baking.Of course, what's apple pie without ice cream?Mountain Man cheerfully took the first bite and declared them delicious!

Mini Apple Pies

2 med. tart baking apples

1/4 c. sugar

2 tsp. all purpose flour

3/4 tsp. ground cinnamon

1 sheet refrigerated pie crust

Preheat oven to 425 degrees. Peel, core, and chop apples and mix with sugar, flour and cinnamon, tossing gently. Set aside while you roll out pie crust and cut out circles to fit into muffin pan. Evenly divide apple mixture among the prepared muffin cups. Cut leftover pie dough into 1/4 inch wide strips and top fillings. Bake until bubbling, about 18 minutes.

This recipe makes about 5 mini pies. We tripled it to make enough for our family. Enjoy!

  1. Oh! How yummy! I have always been a huge fan of apple pie myself. I am so glad that you included the recipe too! I have a slowly growing pile of recipes to add to my cook books. Funny part is most of them so far are deserts. Haha =) Well, I have to start some where ;) Have a fantastic evening!

  2. (just lost my first comment) I know the pies were delicious. Whstler and Boo seemed to enjoy making them with help from Queen Mom. I must say Mountain Man seemed to enjoy them. Sure liked the picture of my handsome son-in-law. It amazes me that Queen Mom has the energy for such things at the present time. Scribe and Little Big Man must know who would have gotten the leftovers if memaw had been there. I'm sure they would have shared with me without any grumbling. Right???
Love all of you and miss you too much. Luke, did you sample the little pies? Pray all of you will have a blessed week filling up your jars with M & Ms
    MUCH LOVE,
    MOM/MEMAW

  7. Just wondering if anyone had mentioned ReJuveness for your scar on your nose? My daughter forms keloid tissue with every scar, and her plastic surgeon recommended ReJuveness. She used it after her last stomach surgery, and you can't even see the scar now! It's just a special piece of plastic like material that you tape over the scar when you sleep. It works wonders. You can read about it at WWW.ReJuveness.com. Just a suggestion.
