Bits of Sunshine Biscuits

You've been warned. You really won't be able to stop at eating just one these bits of savory goodness. They're great with breakfast, lunch, and dinner. The name alone makes one smile, and at just four ingredients, well, this recipe is almost perfect.

Bits of Sunshine Biscuits
~from Gooseberry Patch

1 c. butter, melted
8 ounces of shredded sharp cheddar cheese
1 c. sour cream
2 c. self-rising flour

Combine butter and cheese; set aside to cool for a couple of minutes. Add sour cream; stir in flour. Fill greased mini muffin tins 2/3 full; bake at 350 degrees for 20-25 minutes. Makes about 4 dozen.

(Using regular sized muffin tins, I was able to make 19 muffins.)

Enjoy!

With love,
Trisha

  5. I think you've saved me Trisha. I've got company coming tomorrow and didn't know what to make for breakfast. I'll add a little bacon to this recipe I think.

    Yumm...thanks!

I'm going to try these with my chili tonight, in the place of cornbread. Thanks!
